IT is Mother’s Day this coming Sunday and one day in a year is not enough to show our appreciation.

Mothers do so much: a mother can pick up you are feeling down just from a “hello” said over the phone.

One often hears someone say no one cooks like their mother. They give us the inspiration to strive and improve our cooking.

Mothers are the first people we call when we land our first job, buy our first car or house, and more. Mothers do so much and yet their job is never-ending.

No one gets to a point in their lives where they can say confidently they don’t need a mother.

In the African tradition, a mother is not just our biological parent – a mother is basically every woman who plays the role of a mother in one way or another, namely aunts, neighbours, teachers, grandparents.

Many of us don’t understand what mothers have to go through in raising a child or comprehend what motherhood entails until we become adults.

We often find ourselves wondering how they managed to do everything.

How does one begin to show appreciation for all the love and patience and understanding?

As the late rapper Tupac said in the song, Dear Mama: “There’s no way I can pay you back, but the plan is to show you that I understand.”

This coming Sunday let us show all the mothers out there that they are appreciated – whether we take them out to a fancy restaurant, book them into a spa or cook them a delicious meal at home.

For this week’s recipe, I have prepared this simple yet tasty dish: it’s cheesy lamb rolls with focaccia, mushrooms and olive stuffing.

The dish does not take much time to prepare, leaving one with more quality time to spend with your mother.
